This is one of my mom’s recipe, I remember eating all the time while growing up.
As a mom myself now, there’s nothing quite like the feeling of walking through the door after a long day and realizing you still have to whip up dinner for the family.
After dealing with work, errands, and picking up the kid(s), the last thing you want to do is spend hours in the kitchen.
That’s where my lifesaver recipe comes in – Poor Man’s Beef Wellington. It’s simple, delicious, and requires only four ingredients that you probably already have on hand.
Trust me, this is the perfect solution for those hectic evenings when you need to get dinner on the table in a flash.

Perfect Pairings: Side Dishes to Complete Your Meal
To make this dinner even more fulfilling, I like to serve Poor Man’s Beef Wellington with a few easy and delicious side dishes. Here are some of my favorites:

Ingredients:
- 1 lb ground hamburger
- 1/2 package Lipton dry onion soup mix
- 2 cans Pillsbury croissant rolls
- 1 cup shredded cheddar cheese
Instructions:
Preheat and Prepare: Start by preheating your oven to 375°F (190°C). While the oven is heating up, cook the ground hamburger in a skillet and add the Lipton dry onion soup mix to the browned hamburger, mix until well combined.
Shape the Croissant Rolls: Pat a layer of the croissant rolls on the bottom of your 9×9 baking dish. Save two croissants for the top.
Add the Meat: Add the hamburger mixture over top of the croissant rolls.
Add the Cheese and Egg: Shred 1 – 2 cups of cheddar cheese. Sprinkler over top of the hamburger. Scramble one egg and pour over the cheese and hamburger mixture, this will help the hamburger stay together and not fall apart.
Bake: Place the remaining two croissant rolls on top of the cheddar cheese. Pop in the oven and bake for 15-20 minutes, or until the croissant dough is golden brown.
Serve and Enjoy: Once they’re done, let them cool for a few minutes before serving.

One of the best things about this recipe is how much my daughter loves it. As any parent knows, finding a meal that your toddler will devour can feel like winning the lottery.
