Poor Man’s Beef Wellington is a quick and easy dinner recipe that combines savory ground beef, melted cheddar cheese, and flaky croissant dough for a family-friendly meal. This simple, weeknight-friendly beef Wellington is perfect for busy nights and pairs well with mashed potatoes, roasted vegetables, or green beans.
Preheat and Prepare: Start by preheating your oven to 375°F (190°C). While the oven is heating up, cook the ground hamburger in a skillet and add the Lipton dry onion soup mix to the browned hamburger, mix until well combined.
Shape the Crescent Rolls: Pat a layer of the crescent rolls on the bottom of your 9x9 baking dish. Save two crescent for the top.
Add the Meat: Add the hamburger mixture over top of the crescent rolls.
Add the Cheese and Egg: Shred 1 - 2 cups of cheddar cheese. Sprinkler over top of the hamburger. Scramble one egg and pour over the cheese and hamburger mixture, this will help the hamburger stay together and not fall apart.
Bake: Place the remaining two crescent rolls on top of the cheddar cheese. Pop in the oven and bake for 15-20 minutes, or until the crescent dough is golden brown.
Serve and Enjoy: Once they're done, let them cool for a few minutes before serving.
