- 4 Andouille sausages
- 3 large sweet potatoes peeled and cubed
- 2 bell peppers any color, sliced
- 2 medium zucchinis sliced
- 2 tbsp olive oil extra virgin
- 1 tbsp Cajun Seasoning
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
Prepare the Vegetables
- Peel and cube the sweet potatoes into approximately 1-inch pieces.Slice the bell peppers into cubes.Slice the zucchinis into rounds.
- In a large mixing bowl, combine the cubed sweet potatoes, bell peppers, and zucchini rounds. Drizzle with 2 tablespoons of olive oil.
