This Pumpkin Spice Coffee Cake has become one of my favorite recipes to make for my family during the fall, especially around Thanksgiving.

- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp pumpkin pie spice
Cake
- 2 cups all-purpose flour
- 2 tsp cinnamon
- 1 Tbsp pumpkin pie spice
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup pumpkin puree
- 1/4 cup olive oil
- 1/4 cup honey
- 1/4 cup milk
- 1/4 cup maple syrup
Instructions
Step 1: Preheat and Prepare the Baking Dish
Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×9 baking dish with a light layer of oil or line it with parchment paper for easy cleanup.
Step 2: Make the Crumb Topping
In a small bowl, mix together 1/4 cup flour, 1/4 cup brown sugar, 1 tsp cinnamon, 1 tsp nutmeg, and 1 tsp pumpkin pie spice. Stir until the mixture is well combined and has a crumbly texture. Set aside for later.
Step 3: Mix Dry Ingredients for the Cake
In a medium-sized mixing bowl, whisk together 2 cups of flour, 2 tsp cinnamon, 1 Tbsp pumpkin pie spice, 2 tsp baking powder, and 1/2 tsp salt. This will be the base of your cake, giving it that warm, spiced flavor.
Step 4: Combine Wet Ingredients
In a separate large mixing bowl, add 1 cup pumpkin puree, 1/4 cup olive oil, 1/4 cup honey, 1/4 cup milk, and 1/4 cup maple syrup. Whisk everything together until the mixture is smooth and fully combined.
Step 5: Combine Wet and Dry Ingredients
Gradually add the dry ingredients into the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix, as this can make the cake too dense.
Step 6: Pour and Sprinkle the Crumb Topping
Pour the batter into your prepared baking dish and spread it evenly. Sprinkle the crumb topping over the top, covering the cake batter as evenly as possible for a delicious, spiced crust.
