Itโ€™s a perfect way to enjoy a seasonal treat with ingredients that feel wholesome and nourishing.

As a mom, I always try to balance tasty treats with nutritious ingredients, so I crafted this recipe to be a healthier, no-added-sugar option thatโ€™s naturally sweetened with honey and maple syrup instead of granulated sugar.

This coffee cake pairs beautifully with a hot latte or coffee of your choice, and itโ€™s also ideal if you have family or friends coming over during the holiday season.

Imagine serving up a warm, pumpkin spice coffee cake for breakfast or brunch, with everyone gathered around a cozy table โ€” itโ€™s the perfect way to start Thanksgiving or any fall day!

Why This Pumpkin Spice Coffee Cake is Healthier

Traditional coffee cakes are often made with a hefty amount of granulated sugar, which I wanted to avoid.

Instead, this recipe uses honey and maple syrup, which add natural sweetness without overwhelming the flavors of pumpkin and spice.

Plus, pumpkin itself is full of vitamins and fiber, making this a little more wholesome than your average coffee cake.

Itโ€™s moist, lightly spiced, and topped with a delicious crumb thatโ€™s also made without refined sugars.

What do I Serve with Pumpkin Spice Coffee Cake?

If youโ€™re serving this coffee cake as part of a big fall breakfast spread, there are some delicious options that go perfectly alongside it. Here are a few ideas:

Omelet with Seasonal Veggies: A veggie-packed omelet with spinach, bell peppers, or mushrooms will add a savory balance to the sweetness of the coffee cake.

Sausage Links or Patties: If you enjoy a bit of protein to start your morning, sausage links (especially turkey or chicken for a lighter option) would pair nicely.

Scrambled Eggs with Herbs: Quick and simple, scrambled eggs seasoned with fresh herbs are a classic, easy-to-make addition that complements the coffee cakeโ€™s flavors.

This breakfast spread would make any fall morning special, whether youโ€™re serving just the family or hosting a full house.

Step 3: Mix Dry Ingredients for the Cake
In a medium-sized mixing bowl, whisk together 2 cups of flour, 2 tsp cinnamon, 1 Tbsp pumpkin pie spice, 2 tsp baking powder, and 1/2 tsp salt. This will be the base of your cake, giving it that warm, spiced flavor.

    Step 4: Combine Wet Ingredients
In a separate large mixing bowl, add 1 cup pumpkin puree, 1/4 cup olive oil, 1/4 cup honey, 1/4 cup milk, and 1/4 cup maple syrup. Whisk everything together until the mixture is smooth and fully combined.

Step 5: Combine Wet and Dry Ingredients
Gradually add the dry ingredients into the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix, as this can make the cake too dense.

Step 6: Pour and Sprinkle the Crumb Topping
Pour the batter into your prepared baking dish and spread it evenly. Sprinkle the crumb topping over the top, covering the cake batter as evenly as possible for a delicious, spiced crust.

    Step 7: Bake
Place the dish in the preheated oven and bake for about 35 minutes, or until a toothpick inserted into the center comes out clean. Every oven is a bit different, so you may want to check for doneness around the 30-minute mark.

    Step 8: Cool and Serve
Allow the cake to cool slightly before slicing. Serve the pumpkin spice coffee cake warm with your favorite coffee or a latte, and enjoy a taste of fall in every bite.
