Crumb Topping

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp pumpkin pie spice

Cake

  • 2 cups all-purpose flour
  • 2 tsp cinnamon
  • 1 Tbsp pumpkin pie spice
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/4 cup milk
  • 1/4 cup maple syrup

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x9 baking dish with a light layer of oil or line it with parchment paper for easy cleanup.
  • In a small bowl, mix together 1/4 cup flour, 1/4 cup brown sugar, 1 tsp cinnamon, 1 tsp nutmeg, and 1 tsp pumpkin pie spice. Stir until the mixture is well combined and has a crumbly texture. Set aside for later.
  • In a medium-sized mixing bowl, whisk together 2 cups of flour, 2 tsp cinnamon, 1 Tbsp pumpkin pie spice, 2 tsp baking powder, and 1/2 tsp salt. This will be the base of your cake, giving it that warm, spiced flavor.
  • In a separate large mixing bowl, add 1 cup pumpkin puree, 1/4 cup olive oil, 1/4 cup honey, 1/4 cup milk, and 1/4 cup maple syrup. Whisk everything together until the mixture is smooth and fully combined.
  • Gradually add the dry ingredients into the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix, as this can make the cake too dense.
  • Pour the batter into your prepared baking dish and spread it evenly. Sprinkle the crumb topping over the top, covering the cake batter as evenly as possible for a delicious, spiced crust.
  • Place the dish in the preheated oven and bake for about 35 minutes, or until a toothpick inserted into the center comes out clean. Every oven is a bit different, so you may want to check for doneness around the 30-minute mark.
  • Allow the cake to cool slightly before slicing. Serve warm with your favorite coffee or a latte, and enjoy a taste of fall in every bite.
