What Makes an Enchilada an Enchilada?

Before we dive into the recipe, let’s take a moment to understand what makes an enchilada an enchilada.

Traditionally, an enchilada is a Mexican dish that consists of a tortilla rolled around a filling and covered with a chili pepper sauce.

The name “enchilada” comes from the Spanish word “enchilar,” which means “to season with chili.”

The tortillas can be filled with a variety of ingredients such as meats, cheeses, beans, or vegetables.

What sets enchiladas apart from other similar dishes, like burritos or tacos, is the generous smothering of sauce, which not only enhances the flavor but also keeps the dish moist and delicious when baked.

Meal Prepping and Storage

One of the best things about these enchiladas is that they’re perfect for meal prepping. Here’s how you can store them:

In the Fridge

If you’re planning to eat the enchiladas within a few days, store them in an airtight container in the refrigerator.

They’ll stay fresh for up to 3 days. When you’re ready to eat, simply reheat in the oven at 350°F (175°C) until heated through, about 15-20 minutes.

In the Freezer

For longer storage, freeze the enchiladas before baking.

Wrap each enchilada individually in plastic wrap and then place them in a resealable plastic bag. They’ll last up to 3 months in the freezer.

To bake, thaw them in the refrigerator overnight and then follow the baking instructions.

  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • Fresh cilantro chopped (for garnish)
