Green Chili Beef Enchiladas

Ingredients
  

  • 1 lb hamburger
  • 2 tsps taco seasoning
  • 1 can enchilada sauce
  • ½ cup salsa verde
  • 1 can green chilis
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • Fresh cilantro chopped (for garnish)
  • Sour cream and guacamole for serving

Instructions
 

  • In a large skillet over medium heat, cook your hamburger, sprinkle the taco seasoning over the beef mixture. Pour 1/4 cup of the sauce mixture over the meat.
  • Stir well to ensure the seasoning is evenly distributed. Let it simmer for a few minutes, allowing the flavors to meld.
  • Take a flour or corn tortilla, spoon a generous portion of the seasoned beef onto the center, and sprinkle with shredded cheddar cheese. Fold the sides of the tortilla in and then roll it up tightly, creating a burrito. Repeat until all tortillas are filled.
  • In a separate bowl, mix the enchilada sauce, green chiles, and salsa verde. This will be the flavorful combination that smothers your burritos.
  • Place the rolled burritos in a 9x13in. baking dish, seam side down. Pour the sauce mixture over the burritos, ensuring they are well-coated. Sprinkle additional cheese on top for an extra gooey finish.
  • Bake the burritos in a preheated oven at 375°F (190°C) for about 20-25 minutes or until the cheese is melted and bubbly, and the burritos are heated through.
  • Remove the enchiladas from the oven and sprinkle with fresh chopped cilantro. Serve them hot with a dollop of sour cream and guacamole on the side.
