Ingredients

  • 4 cups rice cereal
  • 1 cup crunchy peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 8 ounces dark chocolate

Instructions

  • In a large bowl, blend 4 cups of rice cereal, 1 cup of peanut butter, 1/2 cup of powdered sugar, 1 teaspoon of vanilla extract, and 1/2 teaspoon of salt until thoroughly combined.
  • Take a quarter sized portion of the mixture and roll them into bite-sized balls, placing them on a parchment-lined tray.
  • Allow the peanut butter rice crispy balls to chill in the refrigerator for about 30 minutes, helping them firm up.
  • Place 8 ounces of dark chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  • Dip the chilled peanut butter rice crispy balls into the melted dark chocolate, ensuring an even coating. Place them back on the parchment-lined tray.
  • Allow the dark chocolate coating to set. Expedite the process by placing the tray back in the refrigerator for approximately 15-20 minutes.
  • Once the chocolate has set, your Peanut Butter Rice Crispy Balls, adorned with a dark chocolate twist, are ready to be savored. Share them during the holidays for a delightful treat that's both easy and indulgent.
