In a large bowl, stir together the creamy peanut butter, powdered sugar, vanilla, and salt until smooth and well combined.
Gently fold in the rice cereal, making sure all of it gets coated without crushing the cereal too much.
Place the bowl in the refrigerator for 15–20 minutes. This helps the mixture firm up and makes rolling easier.
Use a small cookie scoop or spoon to portion the mixture. Roll each portion between your hands to form smooth, even balls. Place onto a parchment-lined baking sheet or in individual mini cupcake liners.
In a microwave-safe bowl or double boiler, melt the dark chocolate and Crisco until smooth. If using the microwave, heat in 20-second intervals and stir between each one.
