Servings 24 balls

Ingredients

  • 4 cups rice cereal
  • 1 cup crunchy peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 8 ounces dark chocolate
  • 2 tbsp crisco or melted butter

Instructions

  • In a large bowl, stir together the creamy peanut butter, powdered sugar, vanilla, and salt until smooth and well combined.
  • Gently fold in the rice cereal, making sure all of it gets coated without crushing the cereal too much.
  • Place the bowl in the refrigerator for 15–20 minutes. This helps the mixture firm up and makes rolling easier.
  • Use a small cookie scoop or spoon to portion the mixture. Roll each portion between your hands to form smooth, even balls. Place onto a parchment-lined baking sheet or in individual mini cupcake liners.
  • In a microwave-safe bowl or double boiler, melt the dark chocolate and Crisco until smooth. If using the microwave, heat in 20-second intervals and stir between each one.
  • Using a fork or dipping tool, gently roll each peanut butter ball in the melted chocolate until fully coated. Let excess chocolate drip off before placing the ball back on the parchment.
  • Allow the chocolate to harden at room temperature or place the tray in the fridge for quicker setting.
Feel free to add sprinkles over the top for a more festive Christmas treat!

Notes

Tips:

  • Adjust the amount of powdered sugar to your sweetness preference.
  • Feel free to add crushed nuts, shredded coconut, or any desired toppings to the chocolate coating.
  • Store the balls in an airtight container in the refrigerator for lasting freshness.
