Ingredients
  

  • 12 ounce cooked pasta whole grain or gluten-free based options work great
  • 1 cup of cottage cheese
  • 1 cucumber diced
  • 1 orange bell pepper diced
  • 1 yellow bell pepper diced
  • ½ cup red onion finely chopped
  • 2 limes juiced
  • ½ cup Italian dressing store-bought or homemade
  • 1 ½ Tbsp Italian seasoning
  • ½ tsp sea salt
  • ½ tsp black pepper

Instructions
 

  • Cook the pasta according to the package instructions. Once cooked, drain and rinse under cold water to cool it down quickly.
  • In a large bowl, combine the cooked pasta, diced cucumber, bell peppers, and red onion.
  • Add the cottage cheese, lime juice, and Italian dressing to the bowl, mixing everything until well combined.
  • Season with salt, pepper, and Italian seasoning.
  • Refrigerate the salad for at least an hour before serving to allow the flavors to meld together.

Notes

Note: You can add additional protein and cut the carbs by adding a protein based pasta whether it's BANZA Pasta or KAIZEN Pasta
Additional Note: If you do use the BANZA pasta it does tend to soak up the cottage cheese and olive oil easily which then can cause the noodles to break apart and not hold their rotini shape. Make sure to boil the noodles to the exact time specified on the box and be aware to not over cook them.
