Ingredients
  

  • 3-4 lb Beef chuck roast
  • 4 large potatoes cut in quarters
  • 1 medium white onion chopped
  • 4 large Carrots
  • 4 Garlic cloves
  • 2 cups Beef broth
  • 1 cup red wine optional

Seasonings

  • 1 tsp Salt
  • 2 tsp ground pepper
  • 1 tbsp Thyme
  • 2 bay leaves
  • 2 tsp Rosemary

Instructions
 

  • Season the beef chuck roast generously on all sides with salt and pepper.
  • Heat a large skillet over medium-high heat and sear the roast for 2–3 minutes per side until browned.
  • Place carrots, potatoes, onion, and garlic in the bottom of a 6-quart crockpot.
  • Set the seared roast on top of the vegetables.
  • Pour beef broth and red wine (if using) over the roast.
  • Sprinkle thyme, rosemary, and add bay leaves.
  • Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the beef is fork-tender. Around 190 °F - 210 °F
  • Remove bay leaves, shred or slice the beef, and serve warm.
