Crock Pot Beef Pot Roast

- 3-4 lb Beef chuck roast
- 4 large potatoes cut in quarters
- 1 medium white onion chopped
- 4 large Carrots
- 4 Garlic cloves
- 2 cups Beef broth
- 1 cup red wine optional
Seasonings
- 1 tsp Salt
- 2 tsp ground pepper
- 1 tbsp Thyme
- 2 bay leaves
- 2 tsp Rosemary
Season the beef chuck roast generously on all sides with salt and pepper.
Heat a large skillet over medium-high heat and sear the roast for 2–3 minutes per side until browned.
Place carrots, potatoes, onion, and garlic in the bottom of a 6-quart crockpot.
Set the seared roast on top of the vegetables.
Pour beef broth and red wine (if using) over the roast.
Sprinkle thyme, rosemary, and add bay leaves.
Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the beef is fork-tender. Around 190 °F - 210 °F
Remove bay leaves, shred or slice the beef, and serve warm.
