Ingredients
  

  • 3-4 lb Beef chuck roast
  • 4 large potatoes cut in quarters
  • 1 medium white onion chopped
  • 4 large Carrots
  • 4 Garlic cloves
  • 2 cups Beef broth
  • 1 cup red wine optional

Seasonings

  • 1 tsp Salt
  • 2 tsp ground pepper
  • 1 tbsp Thyme
  • 2 bay leaves
  • 2 tsp Rosemary

Instructions
 

  • Wash and chop vegetables, peel garlic, and gather herbs.
  • Generously season the beef roast with salt and pepper.
  • In a hot skillet, sear the meat on all sides until browned.
  • Place the seared meat in the crockpot and add vegetables, garlic, and herbs.
  • Add beef broth or red wine to the crockpot for moisture and flavor.
  • Cook on low for 8 hours or on high for 4 hours until the meat is tender.
  • Pierce the meat with a fork; it should easily shred.
  • Allow the pot roast to rest before serving with the cooked vegetables.
