Ingredients
  

  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup olive oil
  • 3/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups all-purpose flour
  • 3/4 cup chocolate chips

Instructions
 

Preheat the Oven

  • Start by preheating your oven to 350°F (175°C).

Mix Wet Ingredients

  • In a large bowl, combine the pumpkin puree, Greek yogurt, egg, vanilla extract, and olive oil. Whisk them together until they’re well blended.
  • Next, mix in the brown sugar.

Combine Dry Ingredients

  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice, and nutmeg.

Mix Dry and Wet Ingredients

  • Gradually add the dry ingredients to the wet mixture, stirring just until combined.

Prepare the Pan

  • Grease a 9x5-inch loaf pan or line it with parchment paper. This will make removing the bread much easier after baking.
  • Pour the batter into the prepared pan and spread it out evenly.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on it towards the end to ensure it doesn’t overbake.

Cool and Enjoy

  • Once the bread is done, let it cool in the pan for about 10 minutes.
  • Then, transfer it to a wire rack to cool completely.
