Hashbrown Scramble in the Air Fryer

Hashbrown casserole in the air fryer is a quick and easy dish that combines crispy hashbrowns, creamy eggs, and melty cheese, optionally enhanced with savory sausage or bacon, cooked to perfection for a hearty breakfast or brunch.

Ingredients
  

  • 1 cup frozen hashbrowns
  • 4 large eggs
  • 1/2 cup shredded cheese cheddar, mozzarella, or your choice
  • 1/2 cup cooked sausage or bacon pieces optional
  • Salt and pepper to taste
  • Cooking spray or a little oil

Instructions
 

Prepare the Hashbrowns

  • Lightly spray the air fryer basket with cooking spray or brush with a little oil. Spread the frozen hashbrowns evenly in the air fryer basket.
  • Cook the hashbrowns for 8-10 minutes, shaking the basket halfway through, until they are golden and crispy.

Prepare The Protein

  • If you haven't already cooked the sausage or bacon, do so now. For sausage, cook it in a skillet over medium heat until browned. For bacon, cook until crispy. Drain excess fat and chop into small pieces.
  • In a mixing bowl, crack the eggs and whisk them together with a pinch of salt and pepper. And any additional seasonings you want, such as garlic powder, onion powder, or other spices. Stir in the shredded cheese and the cooked sausage or bacon pieces (if using).
  • Once the hashbrowns are done, Pour the egg mixture over the hashbrowns, ensuring it is evenly distributed.

Cook the Egg Scramble

  • Cook at 375°F (190°C) for about 10-12 minutes, or until the eggs are set and fully cooked. You may want to check and stir the mixture halfway through to ensure even cooking.
  • Carefully remove the dish from the air fryer. Let the egg scramble cool slightly before serving.
  • Feel free to garnish with additional cheese, fresh herbs, or hot sauce for extra flavor.
