Ingredients
  

  • 8 cups raw broccoli florets chopped
  • 1/2 cup diced red onion
  • 1/2 cup dried raisins or dried cranberries
  • 1/2 cup sunflower seeds
  • 1/2 cup diced bacon about 4-5 bacon strips
  • 3/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 1/2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper

Instructions
 

  • In a large mixing bowl, combine chopped broccoli florets, diced red onion, dried raisins or cranberries, and sunflower seeds.
  • In a skillet over medium heat, cook the diced bacon until crispy. Remove from heat and drain excess fat on a paper towel-lined plate. Let it cool.
  • In a small bowl, whisk together Greek yogurt, Dijon mustard, apple cider vinegar, honey, sea salt, and cracked black pepper until smooth and well combined.
  • Add the cooled bacon to the broccoli mixture. Pour the dressing over the salad and gently toss until everything is evenly coated.
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. This salad can be made ahead of time and stored in the refrigerator for up to 2 days.

Notes

  • Using unsweetened dried cranberries will lower the sugar content
  • Swapping turkey bacon can reduce fat slightly
  • Adding nuts (like almonds) will increase healthy fats and protein
