Hearty Ham and Bean Soup

Ingredients
  

  • 48 ounces Great Northern Beans do not drain (Randall Brand recommended)
  • 6 cups cubed or shredded ham
  • 1/2 a large onion diced
  • 1 to 2 cups celery chopped
  • 5 cloves garlic minced
  • 1 1/2 tsp thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cups beef or chicken broth
  • 2 cups water
  • 1 cup carrots diced

Instructions
 

  • In a large skillet, melt a small amount of butter and sauté the onions and celery for 3 to 5 minutes until softened.
  • Add the minced garlic and cook for 1 minute, stirring frequently so it does not burn.
  • Transfer the sautéed vegetables into your crockpot or large soup pot.
  • Add the ham, carrots, Great Northern Beans with liquid, broth, water, thyme, salt, and pepper.
  • Stir everything together until well combined.
  • If using the crockpot, cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • If cooking on the stovetop, bring to a simmer and cook for 45 to 60 minutes, stirring occasionally.
  • Adjust seasoning to taste and serve warm with sourdough bread and butter.
