48 ounces Great Northern Beans do not drain (Randall Brand recommended) 6 cups cubed or shredded ham 1/2 a large onion diced 1 to 2 cups celery chopped 5 cloves garlic minced 1 1/2 tsp thyme 1/2 tsp salt 1/2 tsp black pepper 4 cups beef or chicken broth 2 cups water 1 cup carrots diced
In a large skillet, melt a small amount of butter and sauté the onions and celery for 3 to 5 minutes until softened.
Add the minced garlic and cook for 1 minute, stirring frequently so it does not burn.
Transfer the sautéed vegetables into your crockpot or large soup pot.
Add the ham, carrots, Great Northern Beans with liquid, broth, water, thyme, salt, and pepper.
Stir everything together until well combined.
If using the crockpot, cook on low for 6 to 8 hours or on high for 3 to 4 hours.
If cooking on the stovetop, bring to a simmer and cook for 45 to 60 minutes, stirring occasionally.
Adjust seasoning to taste and serve warm with sourdough bread and butter.
