  • 5 tablespoons butter
  • 4 cups milk
  • 2 thirds cup flour
  • 1 pound sausage
  • Dash of salt and pepper

  • Start by melting the butter in a large Dutch oven over medium heat. Let it fully melt and begin to bubble slightly.
  • Slowly pour in the milk while whisking continuously. This helps the milk warm evenly and creates the base for a smooth, creamy gravy.
  • In a separate skillet, cook the sausage over medium heat. Break it into small crumbles and let it brown well. The browned bits add a ton of flavor, so do not rush this step.
  • Once the sausage is browned, sprinkle the flour directly over the sausage. Stir and cook the flour with the sausage for one to two minutes so the flour absorbs the fat and loses its raw taste.
  • Transfer the sausage and flour mixture into the warm milk and butter in the Dutch oven.
  • Whisk everything together and let it simmer gently, stirring often, until the gravy thickens to your desired consistency.
  • Season with a dash of salt and pepper, taste, adjust, and serve warm over biscuits.
