Ingredients
  

For the Salad

  • 1 head romaine lettuce chopped
  • 1 cup dry pasta bowtie, rotini, or penne work great
  • 1 cup cherry tomatoes halved
  • 1 yellow or red bell pepper chopped
  • 1 cucumber diced

For the Dressing

  • 1 tablespoon lemon juice
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon dried oregano

Instructions
 

  • Cook the pasta according to package directions until al dente. Drain and rinse under cold water to cool it down quickly.
  • While the pasta cools, chop your romaine, cherry tomatoes, bell pepper, and cucumber.
  • In a small bowl or jar, whisk together lemon juice, olive oil, salt, pepper, and oregano.
  • In a large mixing bowl, combine the romaine lettuce, cooled pasta, and chopped veggies. Drizzle the dressing over the top and toss until everything is coated.
  • Chill for 2–3 hours before serving for the best flavor.
  • Toss again before serving to redistribute the dressing and enjoy!
