Unroll the crescent roll dough and separate it into triangles along the perforated lines. If you're feeling ambitious, you can use a pizza cutter to cut each triangle into smaller pieces for bite-sized pigs in a blanket.
Cut the hot dogs in thirds.
Place a hot dog at the wider end of each crescent roll triangle along with a slice of pepper jack cheese and roll it up towards the point. Arrange the wrapped sausages on a baking sheet, leaving a little space between each one.
