For the Crust and Crumble Topping 1 cup unsalted butter melted 1 1/2 cups all-purpose flour 1 1/4 cups old-fashioned oats 2/3 cup honey 1/2 cup brown sugar packed ½ teaspoon salt or to taste For the Strawberry Layer 2 cups coarsely chopped fresh strawberries 2 tablespoons honey 2 tablespoons lemon juice 1 tablespoon cornstarch
Preheat your oven to 350°F and line a 9x9 baking dish with parchment paper.
In a large bowl, stir together the melted butter, flour, oats, honey, brown sugar, and salt. The mixture should be thick and slightly crumbly.
Press about 2/3 of the mixture into the bottom of the prepared pan to form the crust.
In another bowl, combine the chopped strawberries, raw honey, lemon juice, and cornstarch. Toss until the berries are evenly coated.
Spread the strawberry mixture evenly over the crust.
Crumble the remaining oat mixture over the top.
Bake for 45-50 minutes, or until the top is golden and the strawberry layer is bubbling.
Allow it to cool for at least 15–20 minutes before slicing and serving. It thickens as it sits!
