Strawberry Oatmeal Bars

These easy strawberry oatmeal bars are a warm, gooey dessert made with fresh strawberries, a naturally sweetened filling, and a buttery oat crumble topping that's perfect for summer.

Ingredients
  

For the Crust and Crumble Topping

  • 1 cup unsalted butter melted
  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups old-fashioned oats
  • 2/3 cup honey
  • 1/2 cup brown sugar packed
  • ½ teaspoon salt or to taste

For the Strawberry Layer

  • 2 cups coarsely chopped fresh strawberries
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch

Instructions
 

  • Preheat your oven to 350°F and line a 9x9 baking dish with parchment paper.
  • In a large bowl, stir together the melted butter, flour, oats, honey, brown sugar, and salt. The mixture should be thick and slightly crumbly.
  • Press about 2/3 of the mixture into the bottom of the prepared pan to form the crust.
  • In another bowl, combine the chopped strawberries, raw honey, lemon juice, and cornstarch. Toss until the berries are evenly coated.
  • Spread the strawberry mixture evenly over the crust.
  • Crumble the remaining oat mixture over the top.
  • Bake for 45-50 minutes, or until the top is golden and the strawberry layer is bubbling.
  • Allow it to cool for at least 15–20 minutes before slicing and serving. It thickens as it sits!
