Tater Tot Taco Casserole is a hearty, freezer-friendly meal packed with seasoned beef, black beans, Rotel tomatoes, melty cheese, and crispy tater tots
Preheat your oven to 375°F if baking immediately. If prepping for the freezer, grab an aluminum pan and set it aside.
In a large skillet, cook the ground beef over medium heat until browned, breaking it up as it cooks. Drain excess grease if needed.
Stir in the diced onion and cook until softened, about 3 minutes. Add the garlic and cook for another minute until fragrant.
Stir in the Worcestershire sauce and taco seasoning. Mix well to coat the beef.
Remove the skillet from heat and add in the black beans, Rotel tomatoes with chilis and sour cream.
Spread the beef mixture evenly in the bottom of your prepared baking dish. Sprinkle the 2 cups of shredded cheese over the top.
Arrange the frozen tater tots in a single layer over the beef mixture.
Bake or Freeze
If baking immediately: Place in the oven and bake for 35-40 minutes until the tater tots are crispy and golden brown.
If freezing: Cover the dish tightly with foil and label with the date. When ready to bake, remove from the freezer and bake at 375°F for 50-55 minutes, or until heated through.
Top & Serve: Sprinkle with diced green onions and serve warm!
