Ingredients
  

  • 2 cups dry egg noodles
  • 1 tbsp olive oil
  • 2 cups of broccoli florets
  • 1 cup of diced tomatoes
  • 1 cup of diced bell peppers any color
  • ½ cup diced white onion
  • 2 cups of diced chicken andouille sausage
  • 1 tbsp of soy sauce
  • 1 tablespoon of orange chicken sauce
  • 4 cloves minced garlic
  • Salt and pepper to taste

Instructions
 

  • First, dice all your vegetables and sausage into 1/2 inch pieces. You can do this earlier in the week and store them in the fridge until you're ready to cook.
  • Heat a large skillet over medium-high heat and add the vegetable oil. Once the oil is hot, add the broccoli, bell peppers, and onions to the skillet and cook for another 10 minutes, until the vegetables are tender.
  • Add the diced sausage to the skillet and cook for about 5 minutes, to be heated through as typically the sausage is pre-cooked and only needs heated.
  • Create a small hole in your pan, add a small amount of oil and the minced garlic, cook for about 1 minute, until fragrant.
  • Add the diced tomatoes to the skillet and cook for another 2 minutes, until they start to soften.
  • Add the sauces to the skillet and stir to combine. Cook for another minute, until everything is heated through and well coated in the sauce.
  • Season with salt and pepper to taste.
  • Serve the vegetable stir fry hot, with your choice of side dishes like rice or noodles.
